I love mixing up my sauces and our lemon tree is often abundant with fruit. So this recipe by Bill Granger from ‘Bill’s Everyday Asian’ is a perfect dipping sauce for Salt and Pepper Tofu, sushi or rice paper rolls.
1 1/2 tablespoons of fresh lime juice
1 1/2 tablespoons of fresh lemon juice
3 tablespoons of mirin
2 tablespoons of Tamari or light gluten-free soy sauce
1. In a small saucepan, stir in the lime and lemon juices.
2. Add the mirin and bring to the boil.
3. Remove from the heat and set aside to cool.
4. Stir in the soy sauce and refrigerate or use immediately.
